Chia pudding is the perfect healthy alternative to dessert or any sweet treat for that matter. Full of natural sweetness and all the benefits these tiny little seeds contain, this recipe is an easy five minute treat to make. You can even have it for breakfast to curb those sugar cravings first thing!
1/2 cup of chia seeds
400ml of coconut milk
1 teaspoon of vanilla extract or the seeds from one vanilla bean
2 teaspoons of cinnamon
2 teaspoons of honey (optional)
Sugar free granola or whole nuts (to serve)
Fresh fruit (to serve)
Combine chia seeds, coconut milk, vanilla, cinnamon, banana and honey (if using) in a food processor and blend for 1-2 minutes
Pour mixture into 4 small or 2 medium sized glass jars or cups
Leave in the fridge overnight to set
Serve with granola and fruit of your choice
