There is something so perfect about a bowl full of so many different flavours, textures and colours that makes this human oh so happy! This recipe is really easy to make and full of really healthy ingredients which I love!
The toppings I've listed are my go-to's, but as with most of my recipes you can tailor them to add any ingredients you like. Enjoy the little extra colour this dish will add to your day beautiful humans!
4 small sweet potatoes, pierced with a fork
Turmeric, good sprinkle
Cinnamon, good sprinkle
Salt, good sprinkle
Crumble of Feta
Handful of rocket
Any other toppings you like - Grilled haloumi, slithered nuts, pepitas, tofu, shredded chicken, homemade salsa, anything you like!
Preheat oven to 200 degrees
Pierce sweet potatoes all over with a fork
Cover sweet potatoes in olive oil, turmeric, cinnamon and salt and cook for 40-50 minutes depending how thick your sweet potatoes are
While the sweet potatoes are cooking, fry bacon in a pan in a little olive oil
Prep any other toppings - I use tinned diced beetroot and pineapple chunks so all I’ve got to do is open the tins and they're ready to go
Once the sweet potatoes are cooked, roughly chop with scissors and put two per bowl
Add all the toppings you want and serve
