Healthy breakfasts have been something I have focused on for a long time. Firstly, because I never used to be a breakfast person at all so I really had no idea about 'breakfast foods' and secondly, because if you're someone who doesn't eat bread or cereal - aka me - healthy breakfasts that taste nice can be hard to find. Until I discovered sugar free granola. Ingredients
2.5 cups of unsalted nuts (I use almonds, pecan’s and walnut’s) 2 tablespoons of melted coconut oil 1 tablespoon of desiccated coconut 1 teaspoon of cinnamon 1 tablespoons of honey (optional) Natural yogurt to serve Fruit to serve (optional) Method Pre-heat oven to 120C and line a baking tray with baking paper Meanwhile, roughly chop nuts to desired consistency Combine nuts, coconut oil, desiccated coconut and cinnamon in a bowl (honey as well if you are using it) Spread granola out evenly on the baking tray and place in the oven for twenty-five minutes – turning nuts halfway Serve granola with natural yogurt and any optional toppings such as chia seeds and fruits like banana, pomegranate or berries.
