Stir fry's, in my opinion, are one of the best and easiest meals to make to get a lot of vegetables into your tummy. I love that you can whip up a stir fry in a matter of minutes and can change the flavors so easily. This recipe is another one that you can tweak to suit your liking, depending what your fave veg are. I've listed more ingredients than are in these photos because you can literally put anything you want in!
1 teaspoon of coconut oil
2cm piece of ginger, grated
2 cloves of garlic, minced
1 chilli, sliced
1/2 brown onion, cut into wedges
A quarter head of cauliflower/broccoli/whole bunch of broccolini
15-20 fresh green beans/snow peas/snap peas
Half of a red, green or yellow capsicum
5 small mushrooms
One bunch of pak choy/choy sum/bok choy
Any other vegetables you like
2 tablespoons of soy sauce or tamari
From the list above, choose 3-6 vegetables (not including the ginger, garlic and onion)
Chop vegetables to roughly the same size
Heat oil in large fry pan or wok and add ginger, garlic and chilli and fry for 1-2 minutes
Add the harder vegetables first (carrot, broccoli, cauliflower etc) and fry for 3-5 minutes
Add soy sauce
Next add the softer vegetables (onion, capsicum, mushrooms etc) and fry for another 3-5 minutes
Finally, add any leafy vegetables (pak choy, bok choy etc) and fry for 1-2 minutes
Remove from heat and serve either on its own or with rice or noodles
