Crispy skin salmon is one of my favourite things to eat for so many reasons. I only started eating salmon a few years ago and the first way I tried it was with crispy skin and I was hooked straight away! Since then I have converted non-salmon eaters to die-hard salmon fans with this simple recipe. One of the best things about crispy skin salmon is you can serve it with almost anything! My favourite ways are in an Asian style soup or with a plate of lightly sautéed vegetables. Ingredients
1 piece of salmon (skin on) – can be a tail piece or a thicker piece Olive oil Salt Method Pat the skin of the salmon dry with some paper towel Sprinkle salt all over the skin until it is all covered in a thin layer of salt Heat some olive oil in a fry pan on a medium-high heat, with enough olive oil to almost cover the entire base of the pan Place salmon skin-side down in the pan and turn the heat down to a low-medium heat Cook for 7-12 minutes if you have a thick piece or 4-6 minutes if you have a tail piece For the last minute or two of cooking, turn the salmon to ensure it is cooked through If you like your salmon rare you can skip this step, or flip the salmon once the heat is turned off and allow the residual heat to slightly cook the fish
