There’s no denying crispy skin salmon is one of the greatest things in life, like, ever! I wanted to create a summer salad that is light and refreshing but still filling and super delicious. For me, salmon was the perfect option for this. Now just add this easy-peasy salad to whip up and you’ll be the star chef at every family gathering.
Ingredients – serves 4
3 radishes, sliced thinly and pickled (see below)
4 pieces of salmon
4 tablespoons of olive oil
1 cos lettuce, leaves separated and rinsed
½ continental cucumber, julienned
8-10 Dutch carrots
Coriander, to serve
1 lime, juiced
1 tablespoon of grated ginger
2 tablespoons of soy sauce or tamari
2 teaspoons for olive oil
1 teaspoon of apple cider vinegar
Pickling the radishes
Combine 3-4 tablespoons of white vinegar with ½ a cup of water and a few good cracks of salt and marinade/pickle the radishes while you prepare everything else.
Once you have started to pickle the radishes, prepare the salmon by patting dry the skin with paper towel
Heat the oil in a pan on high heat and once the oil is hot, salt the skin of the salmon and place skin down in the pan and turn the heat down to a medium heat after 1 minute (note: let the salmon stay skin side down for 5-8 minutes depending on the thickness and then flip them and turn the heat off and allow the residual heat to cook the fish – this makes the salmon stay nice and moist in the centre)
In another pan, lightly pan fry the carrots whole with some more olive oil and a little salt (you can swap the salt for honey if you want some extra sweetness to the dish)
While the salmon and carrots are cooking, make the salad dressing by combining all ingredients
Layer the salad on serving plates or bowls, starting with the whole lettuce leaves (a few for each person), then the cucumber, carrots and radish slices
Add salmon and drizzle salad dressing over the top and serve immediately to keep the skin crispy
